In ancient times, when Umbria was an Etruscan lad, fava beans were laid on the tombs of dead people as offerings. This tradition lives on in Umbria every November, the month of All Saints’ Day, when dead people are commemorated.
The shaped like fava beans biscuits are a sweet moment during a time of faithful meditation.
Ingredients for 4 people:
1-1/4 cup of sweet almonds
1-3/4 cups of flour
1/3 cup of sugar
half a lemon zest
hot water
Proceeding:
Blanch the almonds in boiling water, peel them and finely chop them. Add flour, sugar, lemon zest and hot water. Keep mixing until the dough is stiff. Roll to a thickness of 3/4”.
Cut out the dough in circles and shape them like flat and oblong fava beans. Place the biscuits on a buttered oven pan and bake them at 180° for 20 minutes.
Let them cool down before serving.
